What’s your favorite type of cuisine?
Spanish food for sure!
What’s your guilty pleasure food?
Milk and cookies
What’s your favorite drink?
Bourbon and whiskey
What would be your best meal ever?
Puerto Rican rice, beans, pastales, mofongo, and pernil-pork shoulder. Get’s me every time!
What’s your go-to pump-up music in the kitchen?
Actually, anyone who works with me will tell you that I don’t listen to music in the kitchen. I feel the sounds of the kitchen is the music.
Who are your culinary role models?
Wow… so many. Michael Anthony from Gramercy Tavern, Sean Brock from South Carolina.
If you could have dinner with anyone, who would it be?
My family. I would really love to cook for my Mom one more time and sit down to enjoy a home cooked meal.

Aioli in West Palm
What’s you favorite quote?
KISS. Keep it simple stupid. As a reminder to not over complicate food.
