This week, we interviewed Pascale’s jams about their products, their favorite foods, and their favorite Delray Beach local spots.
Do you have any new jams or shrubs:
P: With mango season in its final throes we have been producing our Mango Ginger Jam, Mango Chutney, Mango Ginger Shrub. We’ve also replenished our supplies of Apricot Lavender, Pluot Jam and just starting our Love Jam and Blueberry Merlot Jam.
Top three words to describe your products:
P: Unique, Vibrant, Addictive
What’s your favorite type of cuisine:
P: Simple French cuisine, but we do a lot of Mediterranean inspired dishes.
P: A chilled glass of Rose.
What’s your go-to music in the kitchen:
P: We have an eclectic taste… everything from Sinatra to Stacey Kent to the Beatles to The Foo Fighters…it depends on who’s turn it is to choose.
Who are your culinary role models:
P: I received inspiration from so many people along the way but definitely my Grandmother who was a professional cook, Australian chef Donna Hay, Englishman Jamie Oliver, Canadian and close friend Tim Pickwell [Former exec Chef at Araxi in Whistler, BC] and American chef Ina Garten.
Where’s your best destination ever:
P: Due to our previous working lives both Michael and I have done a lot of traveling, however for us it comes down to 2 places both for very different and distinct reasons, they are 1. The Greek island of Symi and 2. Whistler/Blackcomb in British Columbia.
Favorite local spot?
P: We have a few, but our stand out for dinner is ‘The Grove’ on Second Street and for coffee and treats ‘The French Bakery of Delray’ on Federal.
