Mango Mommie Smoothie from Dr. Stacey Nelson of Tweedle Pet Products. There are lots of mangoes for everyone at the market right now.
1 large ripe mango, peeled and chopped
½ cup fresh pineapple, peeled and chopped
4 fresh strawberries
1/8 cup of shredded coconut
¼ cup of apple juice
¼ cup of orange juice
½ cup of natural spring water
½ cup non-fat plain yogurt (no sugar added)
2-3 ice cubes
Peel and chop the mango and pineapple and put in a blender. Add the banana, strawberries, blueberries, coconut, apple juice, orange juice, water, yogurt and ice cubes. Blend for one minute or until smooth and pour into 4, 6 oz. glasses and enjoy!
Watermelon Salad by Chef Lou
1 seedless watermelon
1 red onion, diced
1 bunch fresh mint, lightly chopped
6 oz. crumbled blue cheese
2 tbs. Heirloom Balsamic Vinegar (or more to taste)
Cut the flesh of the watermelon into bite size pieces and place in large fruit salad bowl. Finely dice the red onion and lightly chop the mint leaves. Toss all the above and add crumbled blue cheese and drizzle with balsamic vinegar. Perfect compliment to your Fourth of July meal or to enjoy by the pool or beach!
